Le Songe de Catherine is a single-vineyard wine.
The vines of this plot, Le Grand Dévès lieu-dit near the village of Châteauneuf-du-Pape, are in average 60 years old.
The soils are mainly composed of cretaceous limestone slabs called lauzes. This type of soil, rare on the appellation, gives the red wines freshness, elegance and a beautiful balance.
Varietal
100% Grenache.
Winemaking and Ageing
Average yield is about 25hl/ha.
40% of whole clusters. Fermentation with natural yeasts for a 4 to 5-week-maceration in concrete tanks. Ageing during 24 months in old French oak demi-muids.
Why "Le Songe de Catherine "?
Catherine of Siena, Saint and Doctor of the Church, went to Avignon in 1376 as ambassador of the city of Florence. She persuaded Pope Gregory XI to return to Rome to relocate the Papacy back where it belonged.Throughout her life she had dreams and mystical visions. During one of the dreams, God appeared to her as a tree with roots plunging down to the earth and brunches that reached up into heaven.
